Ingredients

Udon & Toppings:
  • 2 servings Frozen or Fresh Udon Noodles
  • Chopped green onions for garnish
Sweet Simmered Fried Tofu (Inari Age):
  • 4 pieces Seasoned/Deep-fried Tofu Pouches Aburaage
  • 50 ml about 3.5 tbsp Water
  • 1.5 tbsp Sugar
  • 1 tbsp Soy Sauce
Udon Soup (Tsuyu):
  • 600 ml 2.5 cups Dashi Stock (made with dashi powder or packet)
  • 1.5 tbsp Soy Sauce
  • 1 tbsp Mirin
  • 1 tsp Sugar
  • 1/3 tsp Salt

Method

  1. Simmer the Tofu: In a small saucepan, add water, sugar, soy sauce, and the fried tofu (aburaage). Simmer over medium-low heat for 3–5 minutes until the liquid reduces and the tofu absorbs the sweet soy glaze. Set aside.
  2. Make the Broth: In another pot, combine the dashi stock, soy sauce, mirin, sugar, and salt. Bring to a gentle boil over medium heat, then turn the heat to low to keep warm.
  3. Cook the Noodles: Cook the udon noodles in boiling water according to the package instructions (usually 1–2 minutes for frozen udon). Drain well.
  4. Assemble & Serve: Divide the warm udon noodles into serving bowls. Ladle the hot dashi broth over the noodles, then top each bowl with the sweet fried tofu (aburaage) and chopped green onions. Serve hot and enjoy!
